I'm trying to make the summer last as long as possible. It's not too difficult considering that it is 80 degrees outside & very humid. This recipe was in Organic Style magazine & it looks & sounds divine! Ingredients 2 cups diced peaches, fresh or frozen, plus additional slices for garnish 2 cups crushed ice 2 - 3 teaspoons superfine sugar (depending on sweetness of peaches) 1/4 cup loosely packed basil leaves, preferably opal basil, plus additional for garnish 1 bottle sparkling white wine or sparkling apple cider, chilled
Place peaches, ice, sugar & basil in blender. Puree until smooth. Pour puree into chilled glasses until half full. Add sparkling wine or cider. Serve with sliced peaches & basil sprig as garnishes. Sit by your pool, on the porch, rooftop, or whatever outdoor space you have - sip & enjoy!!
